- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1/4 cup fresh blackberries, pureed
- 1 tablespoon dried lavender buds
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (163°C).
- Combine graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of mini cheesecake molds.
- Beat the cream cheese and powdered sugar until smooth in a separate bowl.
- Add in pureed blackberries, lavender buds, and vanilla extract; mix until well combined.
- Whip the heavy cream in another bowl until soft peaks form, then gently fold into the cream cheese mixture.
- Pour the mixture over the crust in the molds.
- Bake for 20-25 minutes until set, then let cool.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
Serve chilled with garnishes. Store in an airtight container for up to 3 days or freeze for up to 2 months.
